Grilled Apple, Bacon and Cheddar Sandwich Recipe

Apple Bacon Cheddar Sandwich

Pan size:griddle or skillet
Temp: medium high
Cooking time: 1 to 2 minutes on each side
Servings: 1


Roasted Red Onion Mayonnaise can be used not only on sandwiches, it makes a great potato salad dressing.

with Roasted Red Onion Mayo transfer to the hot grill. Grill about 3 minutes per side, since this sandwich is so thick. Remove to a cutting board and cut the sandwich in half on the diagonal to serve.

Ingredients Sandwich:

2 slices (1/2-inch-thick) sourdough, multi grain or another hearty bread
4 slices thick-cut bacon, cooked crisp
2 slices Cheddar
1/2 large tart apple, cored, sliced thin
Roasted Red Onion Mayo, recipe follows
Butter - softened

Directions

Preheat griddle pan or skillet over medium heat.

Butter the outsides of both slices of bread. Spread 1 slice of bread with roasted red onion mayonnaise, top with 1 slices cheddar cheese, the bacon, the apple slices, 1 more slices of cheddar, finishing with another layer of the roasted red onion mayonnaise, transfer to the hot griddle. Grill about 2 minutes each side.

Transfer the apple bacon cheddar sandwich to a cutting board, cut the sandwich in half to serve.

Roasted Red Onion Mayonnaise:

1 medium red onion, chopped
2 teaspoons olive oil, salt and pepper
1 cup mayonnaise.
Preheat oven to 375 degrees F. In a bowl small, toss the red onion, olive oil, salt and pepper together. Lay the red onions onto baking sheet, roast in the oven for 25 to 30 minutes until the onion is very soft, stirring occasionally.
Remove red onions from the oven, let cool. Transfer red onions to a food processor and buzz until finely chopped. Add the mayonnaise and pulse until smooth and combined.
