Easy pudding made with apple butter. Serve this Apple Betty warm with lemon sauce or vanilla sauce.
1 jar (12 ounces) apple butter
6 tablespoons butter, melted
1 teaspoon lemon juice
2 teaspoons vanilla extract
6 cups soft bread cubes
1/4 cup chopped pecans or walnuts
1. Combine the apple butter, melted butter, lemon juice, and vanilla. Add bread cubes and chopped nuts. Toss to combine ingredients. Transfer mixture to baking pan. Bake in a oven for alotted time.
1/2 cup granulated sugar
1 tablespoon cornstarch
1/4 teaspoon salt
1 cup boiling water
1 tablespoon finely grated lemon peel
2 tablespoons fresh lemon juice
1 tablespoon butter
1. In a saucepan, combine sugar, cornstarch and salt. Add boiling water. Cook, stirring constantly, until mixture is thick and clear. Stir in lemon peel, lemon juice, and butter. Serve warm over dessert or bread pudding.
Serve this vanilla sauce with bread pudding or any other dessert.

1. In small saucepan combine sugar and cornstarch. Stir in 1 cup boiling water. Simmer, stirring constantly, for 5 minutes. Stir in 2 tablespoons butter, vanilla extract and salt; blend well. Serve vanilla sauce warm with your favorite pudding or other dessert.
