Apple & Carrot Salad Recipe
Carrot Salad Directions
3 medium apples, cored and diced (do not peel)
1 cup shredded carrots
1 tablespoons lemon juice
1/2 cup dried cranberries
1/4 cup light sour cream
1/4 to 1/2 cup light mayonnaiseCombine apples, carrots, lemon juice, and cranberries in a medium bowl. Add light sour cream and enough light mayonnaise to achieve desired consistency.
Chill the apple and carrot salad for about 1 hour before serving. Easily doubled.
