Sweet Potato, Apple & Spinach Salad Recipe

For a great combination of baking apple; use Granny Smith, Braeburn, Jonagold, Empire, Regent, Spartan, Newtown apples or a mixture of your favorite apples together.

Pan size: large skillet
Salad Bowl: large
Prep time: 20 minutes
Sweet Potato Salad Servings: 6 to 8

Sweet Potato Salad Directions

1/2 cup Catalina salad dressing or light Catalina salad dressing
3 cups peeled, chopped sweet potatoes (about 2 medium potatoes)
1 medium red onion, sliced thin
2 medium apples, chopped in bite size pieces
2 medium pears, chopped in bite size pieces
1 - 10 ounce bag baby spinach leaves

Heat dressing in large skillet on medium heat. Add potatoes and onion; cook 6 minutes or until tender, stirring occasionally.

Add apples and pears; cook 3 more minutes, stirring frequently.

Put spinach in a large bowl, Toss in sweet potato mixture. Serve immediately.

How To Ripen Pears?
Pears do not ripen well on the tree so they are picked when still green. To ripen fresh pears at home, place pears in a brown paper bag, fold over the top of the brown bag and store at room temperature.

In 1 to 3 days, the pears should be ripe. To test for ripeness, apply gentle thumb pressure to the base of the stem. If the fruit yields slightly, the pear is ripe and juicy. Use immediately or refrigerate until ready to use.
