BBQ Chicken Salad with Grilled Apples Recipe

For a great combination of baking apple; use Granny Smith, Braeburn, Jonagold, Empire, Regent, Spartan, Newtown apples or a mixture of your favorite apples together.

Salad Plate size: 4 salad plates
Grilling Temp: medium high heat
Grilling time: 12
Servings: 4

BBQ Chicken salad Grilling Directions

4 boneless, skinless chicken breast halves
3 medium granny smith apples, quartered
1 large red onion, quartered
1/4 cup zesty Italian dressing
1/2 cup barbecue sauce
7 cups mixed salad greens
1 cup ranch dressing

Preheat your grill to medium - high heat. Brush chicken, apples and onions with the Italian dressing.

Grill chicken, apples and onions for about 12 minutes, turning occasionally and then brushing chicken with the barbecue sauce during last few minutes or until the chicken is cooked through (170°F).

Divide salad greens onto 4 salad plates. Slice the bbq chicken into thin strips. Arrange chicken, apples, and onions over salad greens. Drizzle chicken salad with grilled apples with the ranch dressing.

Kitchen Helpful Hints;

To add a tropical flavor grill 4 pineapple rings along with the apples. Than add the pineapple to the salad.

Substitute; Balsamic Vinaigrette Dressing for the Italian dressing.

Easily doubled for a crowd.
